This delicious easy to make then fast to reheat breakfast is made with fresh sourdough bread. I follow the recipe found here* and ferment everything for the longest possible time. The longer the fermentation the easier to digest and the more healthy bacteria there is.
Sourdough is one of the healthiest breads out there. Even though this one contains wheat flour the long fermentation process makes it safe for my gluten-free husband to enjoy safely! Most commercial sourdough breads will not be safe for gluten-free eaters so best to make your own or buy prepared gluten-free bread.
Even though this recipe has much less sugar than any other French Toast Casserole you'll find it has more than enough sweetness. My mom and husband are constantly nagging me about not putting enough sugar in things but even they agreed this was plenty sweet enough. We topped ours with fresh red cherries and a light drizzle of maple syrup.
3 tbl. butter
1 loaf sourdough bread
1-2/3 c. unsweetened vanilla coconut milk (or your favorite milk)
1 tsp. ground cinnamon
1/3 c. pure maple syrup
