One of my favorite things to do is health inspired cooking and baking. The process of baking feels so soothing to me. I love the order of measuring out ingredients, methodical process of combining it all, placing it in a warm oven, savoring the smells and having something delicious to enjoy as a finished product. Plus I feel a lot better knowing that I'm putting quality ingredients into mine and my family's bodies. One of my favorite things about this recipe is the large amount of pumpkin and fiber it contains without making these muffins gooey. My incredibly picky son asks for these muffins weekly. Hope you like them as much as we do!
Gluten Free, Dairy Free, Vegan
3/4 c finely ground oat flour*
1/4 c coconut flour
2 tbl freshly ground flaxseeds
1 tsp baking soda
1 tsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground ginger
¼ tsp ground cloves
1/4 tsp salt
1 tbl freshly ground flaxseeds to make Flax Egg
3 tbl water
1 tbl apple cider vinegar
1 1/2 cups canned pumpkin puree
½ cup coconut sugar
2 tbsp avocado oil
1 tsp vanilla extract
1/2 cup chocolate chips (dairy free)
*To make your own oat flour simply grind up rolled oats in a food processor or coffee grinder to desired consistency.
